  • 1 can (15 oz) pure pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking soda
  • 2 cups all-purpose flour
  • 1/2 tsp kosher salt
  • 1/2 cup powdered sugar
  • 1/4 cup pure maple syrup

  2. In a bowl, whisk together the flour, baking soda, salt, cinnamon, and pumpkin pie spice.
  3. In another bowl, mix melted butter, sugars, pumpkin puree, oil, eggs, and milk until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Avoid over-mixing.
  5. Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
