  • 1 1/4 cups pumpkin puree
  • ½ cup butter (room temperature)
  • 2 cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup milk
  • 1/2 cup cold butter, cubed (1 stick)
  • 1 cup light brown sugar
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9 x 13 inch baking dish.
  2. In a large bowl, whisk together flour, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In an electric mixer, combine butter and pumpkin puree until smooth. Add sugar, then mix in eggs and vanilla.
  4. Gradually add the dry mixture alternating with milk until combined.
  5. For the crumb topping, mix cold butter with brown sugar and flour using fingers until crumbs form.
  6. Layer half of the batter in the prepared dish; sprinkle half of the crumbs on top. Add remaining batter followed by remaining crumbs.
  7. Bake for 45-55 minutes until golden brown and a toothpick comes out clean.
