  • 1 white onion, finely chopped
  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped
  • 2 large eggs
  • 1 box (8.5 ounces) corn muffin mix
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and drain it thoroughly to remove excess moisture.
  3. Sauté the finely chopped onion in a skillet over medium heat until soft and translucent.
  4. In a large bowl, combine the drained zucchini, sautéed onions, half of the shredded cheddar cheese (reserve some for topping), corn kernels, jalapeño, eggs, spices, and cornbread mix. Mix until well combined.
