  • 4 Persian cucumbers or 1 English cucumber
  • 1 medium ripe avocado
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 cloves garlic – peeled and minced
  • Salt and pepper – to taste

Instructions

  1. Wash and dry cucumbers; chop them in half. Smash each half gently with the flat side of a knife.
  2. Chop smashed cucumbers into 1-inch pieces and place in a bowl.
  3. Add bite-sized avocado pieces to the bowl.
  4. Incorporate feta cheese, pistachios, dill, and chives; mix gently.
