  • 1/3 cup brown sugar
  • 3 1/4 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (177°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened vegan butter, pumpkin puree, brown sugar, granulated sugar, and vanilla until light and fluffy.
  3. In another bowl, whisk together all-purpose flour, baking powder, pumpkin pie spice, cornstarch, and salt.
  4. Gradually combine the dry ingredients into the wet mixture until just blended; avoid over-mixing.
  5. Chill the dough for at least 30 minutes before scooping it onto the prepared baking sheet in 2-inch balls.
  6. Flatten slightly and bake for 10-12 minutes until set; cool completely on a wire rack.
  7. For frosting, beat vegan butter with vanilla paste, cinnamon, pumpkin pie spice, brown sugar, and powdered sugar until smooth. Pipe frosting onto cooled cookies.
