  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1 box (8.5 oz) corn muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef. Add diced onion and minced garlic; sauté until translucent.
  3. Stir in corn, black beans, diced tomatoes, chili powder, cumin, paprika, and salt. Simmer for 5 to 7 minutes.
  4. In a separate bowl, combine corn muffin mix, egg, and milk; mix gently.
  5. Pour beef mixture into a greased baking dish and spread cornbread batter on top.
  6. Bake for 25 to 30 minutes until golden brown.
  7. Sprinkle cheese on top and return to the oven for an additional 3 to 5 minutes until melted.
  8. Let cool slightly before serving warm.
