  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil
  • 1/4 cup plain yogurt
  • 2 tablespoons apple cider vinegar
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)
  • Pita bread
  • Fresh vegetables (like cucumbers and tomatoes)

Instructions

  1. In a bowl, mix together the spices: cumin, paprika, turmeric, coriander, cinnamon, cayenne, salt, and black pepper.
  2. Add olive oil, yogurt, apple cider vinegar, lemon juice, and minced garlic into the spice blend. Stir until well combined.
  3. Place chicken thighs in a resealable bag or shallow dish and pour the marinade over them. Ensure each piece is coated well. Refrigerate for at least 2 hours or overnight for best results.
  4. Cook the marinated chicken by grilling over medium heat or baking in an oven preheated to 400°F (200°C) until it reaches an internal temperature of 165°F (75°C).
  5. Serve garnished with chopped parsley alongside warm pita bread and fresh vegetables.
