2 boneless, skinless chicken breasts
4 slices cooked turkey bacon
1 ripe avocado, sliced
2 slices pepper jack or cheddar cheese
2 brioche buns, toasted
¼ cup mayonnaise
1 tbsp adobo sauce
½ tsp lime juice
1 tbsp olive oil
1 tsp smoked paprika
½ tsp garlic powder
¼ tsp cayenne pepper
Salt and pepper to taste
¼ cup pickled jalapeños
Instructions
Prepare the chicken by pounding it to an even thickness. Rub with olive oil and season with smoked paprika, garlic powder, cayenne pepper, salt, and pepper.
Grill the chicken over medium-high heat for about 4–5 minutes per side until fully cooked (165°F). Add cheese during the last minute to melt.
Mix mayonnaise, adobo sauce, and lime juice to create chipotle mayo.
Toast the brioche buns until golden brown.
Assemble the sandwich by spreading chipotle mayo on the buns and layering with avocado, grilled chicken with cheese, turkey bacon, and pickled jalapeños.
