4 medium tortillas (flour, whole wheat, or gluten-free)
2 cups fresh spinach (chopped)
1 cup feta cheese (crumbled)
2 tablespoons olive oil or butter
1/4 cup sun-dried tomatoes (chopped)
1/4 cup black olives (sliced)
1/2 cup cooked grilled chicken (diced)
Instructions
Heat one tablespoon of olive oil in a skillet over medium heat. Sauté the chopped spinach, sun-dried tomatoes, and black olives until the spinach wilts (about 2-3 minutes).
On one half of each tortilla, sprinkle crumbled feta and add the sautéed mixture along with grilled chicken if using. Fold the tortilla over.
In the same skillet, add another tablespoon of olive oil if needed. Cook the folded quesadilla until golden brown on one side (3-4 minutes), then flip and cook for another 3-4 minutes.
Remove from heat and let cool slightly before slicing into wedges.
