  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 pound lean ground turkey
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ cup black beans (drained and rinsed)
  • ½ cup canned corn (drained)
  • ½ cup diced tomatoes
  • ¼ cup chopped fresh cilantro
  • ½ cup shredded cheese (cheddar or Mexican blend)
  • Plain Greek yogurt or sour cream (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and pierce sweet potatoes with a fork. Bake directly on the oven rack for 45–50 minutes until tender.
  2. In a skillet over medium heat, warm olive oil, then sauté onion for about 3–4 minutes until translucent. Add garlic and cook for an additional 30 seconds.
  3. Add ground turkey to the skillet, cooking until browned (about 5–7 minutes). Stir in smoked paprika, chili powder, salt, and pepper.
  4. Mix in black beans, corn, and diced tomatoes. Let simmer for about 5–7 minutes.
  5. Once sweet potatoes are baked, slice them lengthwise and mash some flesh to create space for filling.
  6. Spoon the turkey mixture into each sweet potato and top with cheese. Return to the oven for an additional 5 minutes until cheese melts.
  7. Serve warm, garnished with fresh cilantro and optional Greek yogurt or sour cream.
