  • 2 cups granulated sugar
  • ½ cup cocoa powder
  • 1½ tsp baking powder

  • ½ cup whole milk, room temperature
  • 2 large eggs, room temperature
  • ½ cup sour cream, room temperature
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp espresso powder
  • 1 cup hot water
  • 4 large egg yolks
  • 2 tbsp granulated sugar
  • 2 tbsp cornstarch
  • 2 cups heavy cream, divided
  • 3.5 oz dark chocolate, finely chopped
  • 4.5 oz white chocolate, finely chopped
  • 5 oz milk chocolate, finely chopped
  • ⅓ cup heavy cream

Instructions

  1. Preheat oven to 350°F (180°C) and prepare two 8-inch round cake pans.
  2. In a bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, milk, sour cream, oil, and vanilla until smooth. Combine with dry ingredients.
  4. Dissolve espresso powder in hot water; add to the batter. Bake for about 35 minutes until a toothpick comes out clean.
  5. For the mousses: Whisk egg yolks with sugar and cornstarch; heat heavy cream until steaming. Combine mixtures and pour over chopped chocolates to melt.
  6. Fold whipped cream into each chocolate mixture gently.
  7. Assemble by layering chocolate cake with dark chocolate mousse and white chocolate mousse; chill for at least four hours.
  8. Prepare ganache by heating heavy cream and pouring it over chopped milk chocolate until smooth.
  9. Decorate with ganache and toppings of choice.
