  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 vanilla bean, split and seeds scraped
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter; press into cupcake liners.
  3. Beat cream cheese and sugar until smooth; add eggs one at a time, mixing well.
  4. Stir in sour cream, heavy cream, vanilla bean seeds, and vanilla extract until combined.
  5. Pour the batter into liners and bake for 20–25 minutes until set but slightly jiggly.
  6. Cool to room temperature before refrigerating for at least 2 hours.
  7. Before serving, sprinkle sugar on top and use a kitchen torch to caramelize.
