  • 4 cups powdered sugar
  • 23 tbsp milk
  • Fresh raspberries
  • White chocolate curls or shavings
  • Mint leaves

Instructions

  1. Preheat your oven to 350°F (175°C) and grease three 8-inch round cake pans.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. In another bowl, cream the softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, then stir in melted white chocolate and vanilla extract.
  5. Alternate adding the dry mixture with milk until just combined.
  6. Divide batter among pans and bake for 25-30 minutes or until a toothpick comes out clean.
  7. For the raspberry filling, combine raspberries with sugar and lemon juice in a saucepan over medium heat; thicken with cornstarch slurry.
